Daily Adobe Illustrator automation using variables from a CSV - script writing may be the solution?

Job Description:
We have a lot of custom orders (sometimes 500 a day) which I have in a CSV format. These need to be added to illustrator and edited by our designers before printing/cutting. I would like to automate this more than we currently do, but I have learned all I can about variables and wonder if someone out there could help me to automate our AI creation further potentially through a script or set of scripts...
Things like using the data in the CSV to...
* assign fill colours
* moving specific text strings within a cell to certain position and applying text kerning based on the data (example if the cell says '21' text needs to be at XY co-ordinates, with Z size and Kerning applied to it, but if it says '22' - that would be a different position, size, kerning number etc)
* We have many skus, so potentially a script can look at the SKU in the CSV, open the correct file, apply the variables and then move onto the next line of the CSV which may be a different SKU and therefore file
I would like chat initially and share my screen via video call on slack to show you the system I have currently in place, then we can discuss what you think is achievable in terms of how much further the system can be automated - assuming further automation is possible and all being well, we will continue the project.
Please only apply if you have relevant experience with variables and scripting in illustrator, I need an expert here please not someone who thinks they may be able to help. Also I only speak English, so an English speaker is necessary.
Rather than set a project budget I think this one will be done based on the estimate you can give me for your time, I have no idea if this is easy, if the scripts exist already, or if this is difficult or even possible... So if you can let me know your hourly rate, your confidence in your ability, then following a video call we can discuss the time and budget for the project?
