.ebextensions files can have the resources that are supported by aws cloudformation. so you can have es domain getting created as part of eb packages.

We can deploy ELK stack with the app on ECS . The setup can be done using cloudformation template . In the rails app we can have multiple configuration to handle dev , test , prod environments . We can further link ELK to an RDS domain , if u want a public access or we can hide it behind openvpn and make it sure only you/your people can see it.
