On my day job, I have recently completed a design with GSM module, based on ST microcontroller. It has one board with the processor, and one board with the wireless module. Several different modules designed. The two boards are connected via a 20-pin connector. I think it is very close to your concept. I can change the processor to 89c51, if you'd like. If you want me to do the programming, it would be a separate task. Not enough details is provided.
