I have gone through your requirements and feels I can help.
Let me summarize it in my own words- Project Statement-
You need an Excel/Google forms, once the data is filled in the form and saved, data will be automatically saved in Excel sheet. Based on that you can prepare Pivot table or chart, which will summarize the aggregated orders/items etc. If you like, I can prepare excel reports as well for Analysis.
About Myself- I have more than 12+ years of experience in Reporting and Data Analysis, Dashboards, Trackers, Charts, Pivots. The Reports could be Excel based Reports/ Tool based reports (Tableau/Microsoft Power BI).

However, I have one concern, there could be language barrier as the excel you sent seems to be in spanish.. it would be a bit difficult for me to decode. Anyway i will try to find a workaround for this.
