Google/Search Engine Expert

We need some straight answers about how the major search engines work, from someone who REALLY knows what he/she is talking about. We are particularly interested in google. Our situation is as follows: We are a retail establishment that also does a lot of orders over our website. We recently hired a company to redo our website and are not at all happy with the results. While the site works fine when you are on it, and search engines can find the site by name, google and the other major search engines are not able to index individual pages from the site. The company that built our site is completely clueless as to why this is. (and also clueless as to why we would ever want search engine users to be able to find individual products on our site- but that is another issue!) The site is built on "dynamic pages," not html. According to Google's info for webmasters, googlebot cannot crawl through and index all the pages on "dynamically" designed sites because it will crash the site. Our web designer either denies this or doesn't understand it. We have consulted with a few other web designers and keep getting conflicting information. The latest information someone told us was that google can only index the first 30 pages or so of a site. When we asked why this was, the person of course did not know. This doesn't seem correct, as google is able to index the millions of books on amazon successfully. So we would like to know if this information is true, and if so, why can't google index more than 30 pages from a particular site? This is a very small job for the right person. We simply need to have a dialogue with a Google expert who can answer our questions, sort through the conflicting information we have received, and tell us what's what. We were told the site uses MySQL databases, OS Linux Red Hat and Open Source, if that makes any difference in the answers we seek.
