Magento clean install, import, theme adjust

We have 2 magento stores 1.7.0.2 with custom skins and we'd like to move to a new server/hosting and in that process start clean so we'd like: Clean install of current magento version (1.8.1 at the time of this posting) Import products Import categories Import customers and customer information Keep URL structure the same as current store Optimize magento for speed including correct cache and cron setups, .htaccess, log cleaning etc Install module for google feed (we have simplegoogleshopping installed on both sites we can provide) Customize theme for simplicity (we currently have custom theme but in moving we'd like a clean installed theme done with regard to magento best practices to minimize future upgrade problems) Set up shipping configurations and payment gateways to mimic current installations Pre-launch checklist we need to complete before launch Test before launch With regard to hosting, we can select our own host or use your recommended or provided hosting as a separate add on cost to the project. In other words, if you can provide magento optimized hosting we will accept a SEPARATE quotation otherwise we can provide a magetno optimized hosting environment. We would like a php 5.4 hosting environment in which case (I believe) we would need to have the php 5.4 patch applied for magento as well. We've had problems which are likely attributed to our current shared hosting environment and since we'd like to move to a new server better suited for magento we'd like to start with a clean install and properly functioning store from the start which doesn't have the remnants of deleted modules and other customizations that had been made previously. Since we have 2 stores live we can provide access to the database and/or export files of products and customers however the more advanced move of customer data and categories will require database access or custom modules to be applied as those are not native in magento CE. This project is considered one project and future work will hopefully be handled by the winning freelancer on an additional per project basis such as theme revisions and module implementations to ensure best practices are followed going forward. Our site is glitchy right now so an upgrade in it's current state is out of the question however all products, images, categories, customer data and URL structure are of great importance.
