You could use Sage 50 SDK for downloading everything, store on temporary database locally, and then write the Zoho Books extensions which is controllable over Zoho API and sync everything over it. This would be most accurate and quick process.

I have a very good experience in working with CRMs and data migration across CRMs. Have a good understanding about processes and modules in Zoho. Will like to understand data fields in Sage and stages classification and I can then customize modules in Zoho to transfer the data without losing any data integrity.
