For MCU of this board, will you use PIC, STM32, AVR or others
Almost all MCU have, I/O port, I2C, SPI, UART, and library for 1-wire is also common, but for ADC, common is 10 bit, so if you want to make more accurace with higher resolution, we should use ADC-Chip from 12-24bit, and communicate with MCU through SPI protocal.
To control 24V valve we can use POWER MOSFET and isolated with Opto, drive by transistor and have blocking diode
To control AC motor (I need know power, voltage, 1 phase or 2 phases), we can use inverter technology through analog (DAC) from MCU, or for small power, we can use SRC, Triac
The power management is also important for this board.

Software for PCB Schematic and PCB Layout: Altium 20 or Proteus 8.9
Software for firmware: AVR will use AVR Studio, PIC use MPLAB X / CSS, STM32 use STM32CubeMX - Keil C
I also can build prototype of PCB for you, double sides, through hole plating, green mask, component's name printing, solder component (SMD)
